The Alkorta cod, which originates
from the North Atlantic seas are checked in and stored in
raw material chambers at optimal temperatures to ensure it
is kept in excellent conditions.
It is then cut in different formats
depending on the cooking method (loins, everyday meal, Pil-Pil…etc.). |

This is followed by the desalination
stage, which requires specific handling so that the product
is not lost, and its quality unaffected. Each product requires
the right amount of salt.
Once desalination has been carried
out, we proceed to the packaging, either vacuum packed or
in trays of bath atmosphere, in different formats, according
to the needs of the client. |
